The Coffee to Water Ratio for Every Brewing Method

How much coffee to use for drip, pour-over, French press, cold brew and espresso, from the National Coffee Association's own numbers, with a worked chart in grams and tablespoons and the one cheap tool that makes it repeatable.

A lot of home coffee is one ratio away from being better coffee. Not a new machine, not expensive beans: just the right amount of coffee for the amount of water, used the same way every morning. This page is the reference for that number, method by method, using the figures the National Coffee Association publishes rather than anyone’s rule of thumb.

The short version, if that is all you need:

  • Drip coffee maker:1 to 2 tablespoons of ground coffee for every 6 oz of water — the NCA’s “Golden Ratio”.
  • Pour-over:1 gram of coffee to 13–16 grams of water (1:13 to 1:16).
  • French press:1 gram of coffee to 10–16 grams of water (1:10 to 1:16).
  • Cold brew:1 gram of coffee to 4–5 grams of water (1:4 to 1:5) — a concentrate, not a ready-to-drink cup.
  • Espresso:1 gram of dry coffee to 2 grams of espresso in the cup (1:2) — measured on the way out, not the way in.
  • Moka pot: there is no ratio to choose. The pot sets it (more on that below).

What a coffee to water ratio actually means

A ratio like 1:16 means one part coffee to sixteen parts water, by weight. Twenty grams of coffee at 1:16 wants 320 grams of water (20 × 16). Going the other way, if you know how much water you are using, divide it by the second number: 500 grams of water at 1:16 needs 31.25 grams of coffee (500 ÷ 16).

The smaller the second number, the stronger the coffee. 1:13 uses more coffee for the same water than 1:16, so it makes a stronger cup. That is the whole idea behind the NCA’s ranges: the low end is the strong end, the high end is the lighter end, and anywhere inside is a reasonable cup.

The water side is easier than it sounds. The U.S. Geological Survey puts the density of water at “roughly 1 gram per milliliter”, so 320 grams of water is, for kitchen purposes, 320 mL. If they own a measuring jug but no scale big enough for the water, the jug will do. It is the coffee that really needs weighing, for reasons that come up in a moment.

One more detail: for every method except espresso, the ratio describes the water you pour in, not the coffee you end up with. The wet grounds keep some of it, so the cup is always a little smaller than the water you started with.

Worked chart: how much coffee for the water you’re using

This is the calculator, done in advance. Each cell is the water divided by the two ends of the NCA range for that method, rounded to one decimal place — for example, 500 g ÷ 16 = 31.3 g and 500 g ÷ 13 = 38.5 g. The first number in each cell is the lighter end, the second the stronger end.

Drip coffee makers: the Golden Ratio in tablespoons

Drip is the one method the NCA gives in spoons rather than grams: 1 to 2 tablespoons of ground coffee for every 6 oz of water. That is the answer to the everyday question of how much coffee to put in a coffee maker, so here it is scaled up to the amounts people actually brew:

The milliliter figures come from NIST’s kitchen equivalents, which put 6 fl oz at about 180 mL and 24 fl oz at about 720 mL, or three cups. A cup measure is about 240 mL and a tablespoon about 15 mL, which is why sixteen tablespoons make one cup — handy when a big pot calls for a dozen or more.

Two catches. First, the NCA’s 6 oz is not a mug: NIST puts 6 fl oz at three-quarters of a cup. And the “cup” lines on a coffee maker’s carafe are the manufacturer’s own unit, so it is worth measuring the water once with a measuring jug rather than trusting the markings. Second, the Golden Ratio’s own range is wide — two tablespoons is twice as much coffee as one — which is why it is a starting point, not a recipe. We have deliberately not converted those tablespoons into grams. A tablespoon of coffee weighs a different amount depending on how finely it is ground, how darkly it is roasted and how heaped the spoon is, so any single conversion would be a guess. If you want to know for their coffee, weigh one level tablespoon of it once. Then you know.

How much coffee per cup?

It depends on what “a cup” means, which is the source of most of the confusion. Using the NCA’s drip ratio and NIST’s cup:

  • Per 6 oz of water(the NCA’s unit): 1 to 2 tablespoons.
  • Per 8 oz measuring cup(about 240 mL): a little over 1 to a little under 3 tablespoons — 8 ÷ 6 × 1 is about 1.3, and 8 ÷ 6 × 2 is about 2.7.
  • Per 12 oz mug(about 360 mL): 2 to 4 tablespoons, because 12 oz is exactly two of the NCA’s 6 oz units.
  • By weight, for pour-over: 15 to 18.5 grams of coffee for a 240 g cup of water, straight from the chart above.

Espresso counts the other way

Espresso is the exception that trips people up. The NCA’s 1:2 is dry coffee to brewed espresso — the weight of what comes out, not the water that goes in. If someone doses 18 grams of coffee, they are aiming for about 36 grams of espresso in the cup (18 × 2), and the shot should take 20 to 30 seconds. A tablespoon or a measuring jug cannot help with that; only a scale under the cup can.

Moka pots: the pot sets the ratio

None of the NCA figures above covers a moka pot, and there is a good reason nobody needs one. Bialetti’s instructions are to fill the base with water no higher than the safety valve — going past it risks “making a coffee that is too watery” — and to “generously fill the funnel with ground coffee for Moka up to the edge”, without mounding or pressing it. The pot’s own chambers fix the amounts.

Why weighing beats scoops

Every ratio above except drip is written in grams, and there is a practical reason. A scoop measures volume, and the same scoop holds a different weight of coffee depending on the grind, the roast and how heaped it is. Two people using “two scoops” can be making noticeably different coffee, and the same person can drift from week to week without knowing why the Tuesday pot came out better than the Friday one.

A scale removes that. Put the brewer on the scale, zero it, add the coffee, zero it again, and pour the water. The recipe is now something that can be written down and repeated exactly — and, just as importantly, changed one thing at a time. If the coffee is too weak, they move from 1:16 to 1:15 and know that is the only thing that changed.

What to look for in a coffee scale

A coffee scale is a small, cheap object, but a kitchen scale is not quite the same thing. Four features matter, in this order:

  • A 0.1 g readout.Coffee doses are small — the chart above puts one cup of pour-over at 15 to 18.5 grams. A scale that only shows whole grams can be out by up to half a gram either way, which on a 15 g dose is about 3% of the coffee. All three picks below read to 0.1 g.
  • A built-in timer.Time is the other half of every recipe: the NCA gives 2–4 minutes for pour-over, roughly 4 for a French press and 20–30 seconds for espresso. Weight and time on one display beats a scale plus a phone balanced next to a kettle.
  • A size that fits the brewer.It needs to sit under a dripper or, for espresso, on a machine’s drip tray, and still be readable with a brewer on top.

Adjusting the ratio to taste

Start in the middle of the NCA range for their method and change one thing at a time. For a pour-over or a French press, 1:16 is the lighter end; moving to 1:15 and then 1:14 makes the cup stronger in small, noticeable steps. If it tastes too strong, go the other way. Staying inside the published range keeps every step a reasonable cup.

It is worth knowing what the ratio does not fix. The ratio controls strength — how much coffee is in the water. A cup that is bitter or sour at a sensible ratio usually has a grind or timing problem instead, and changing the ratio to cover it just makes a stronger bad cup. When they find a ratio they like, write it down with the grind setting and the time. That note is worth more than any single piece of equipment.

Common ratio mistakes

  • Trusting the carafe’s cup lines.A carafe’s “cup” is whatever the manufacturer decided it is, and it may match neither a measuring cup nor the NCA’s 6 oz. Measure the water once.
  • Heaped scoops. A heaped scoop and a level one can differ by a lot. If they must use a scoop, level it every time.
  • Using the espresso ratio for everything else. 1:2 is coffee to espresso out. Applied to water going into any other brewer, it would be absurdly strong.
  • Drinking cold brew concentrate straight.At 1:4 there is four times as much coffee per gram of water as at 1:16 (16 ÷ 4). It is meant to be diluted, and how to make cold brew coffee covers how.
  • Forgetting to zero the scale. Weighing the coffee with the dripper and filter still counted adds their weight to the dose. Zero with the empty brewer on, then add coffee.
  • Scaling a recipe by eye. Doubling the water for a second person means doubling the coffee too. The chart above does the arithmetic.

How far does a bag of coffee go?

A useful question when you are buying beans as a present. NIST puts an ounce by weight at about 28 grams, so a 12 oz bag holds about 336 grams of coffee (12 × 28). A 12 oz mug is about 360 grams of water. At 1:16 that mug takes 22.5 grams of coffee, so the bag makes about 15 mugs (336 ÷ 22.5 = 14.9); at the stronger 1:13 it takes 27.7 grams and the bag makes about 12 (336 ÷ 27.7 = 12.1). For a French press at the strong end, 1:10, it is closer to 9.

In other words, a 12 oz bag is roughly two weeks of one mug a day — which sits comfortably inside the one to three weeks the NCA gives for whole beans at room temperature. What ratio should I use for cold brew?

The NCA gives 1 gram of coffee to 4 to 5 grams of water, steeped for about 12 hours. That is a concentrate with four times as much coffee per gram of water as a 1:16 hot cup, so it is meant to be diluted before drinking. For 1 liter of water, use 200 to 250 grams of coarse-ground coffee.

How many grams of coffee are in a tablespoon?

There is no single honest number. A tablespoon of ground coffee weighs a different amount depending on the grind, the roast and how heaped the spoon is. The reliable way to find out is to weigh one level tablespoon of the coffee you actually use, once, on a scale that reads to 0.1 gram.
