How Much Caffeine Is in a Cup of Coffee?

The honest answer is a range, not a number — and the range is wide for reasons you control. Here are the published figures from the FDA and USDA, and what actually moves the number in your own mug.

Every page that answers this question with a single confident number is doing you a disservice, because the honest answer is a range and the width of that range is the interesting part. The FDA’s published figure for regular brewed non-specialty coffee is 113 to 247 milligrams per 12 fluid ounces. That is more than a twofold spread for the same drink at the same size.

The spread is not measurement noise. It is the difference between a weak pot and a strong one, and it is almost entirely under the control of whoever made the coffee. Understanding which variables move the number is more useful than memorising an average — especially if you are trying to cut down without giving up the ritual.

The published figures

Two authorities are worth quoting here. The FDA publishes typical caffeine content per 12 fluid ounces for common drinks. The USDA publishes reference values per 100 grams in FoodData Central, which is a more precise way to express it and a less intuitive one.

The two coffee figures agree better than they look. The USDA’s 40 mg per 100 g works out to roughly 95 mg in an 8 fluid ounce cup and roughly 140 mg in a 12 fluid ounce one — comfortably inside the FDA’s 113–247 mg band, toward the lower end, which is what you would expect from a standard reference brew rather than a strong one.

What actually moves the number

The dose, by a mile

Caffeine comes out of the coffee, so more coffee per cup means more caffeine in the cup. This is the single largest factor and it is entirely within your control. A heaped scoop instead of a level one can move a mug by a third. If you own a scale, you already know exactly how much you use; if you do not, you are estimating a number that varies every morning.

The size of the cup

Obvious and constantly ignored. “A cup of coffee” in the FDA’s table means 12 fluid ounces. A large takeaway cup can be twice that, and a small espresso is a fraction of it. The brewing method, a bit

Longer contact between water and coffee extracts more, so a four-minute French press brew tends to pull more out of the same dose than a two-minute pour-over. But this is a smaller effect than dose and volume, and it is easy to overstate. The roast, hardly at all

This is the myth worth killing. Dark roast tastes stronger, so people assume it is stronger. The National Coffee Association describes light roasts as carrying a slightly higher amount of caffeine, and states plainly that the strong flavour of a dark roast is not associated with caffeine levels. The bean species, genuinely

The one variable most people never consider. The NCA puts robusta at about 50 to 60 percent more caffeine than arabica, and robusta shows up in supermarket blends, instant coffee and traditional Italian espresso blends. A bag marked “100% arabica” is telling you something real about the caffeine as well as the taste — see arabica vs robusta.

How much is too much

The FDA cites 400 mg a day— described as about two to three 12 fluid ounce cups of coffee — as an amount not generally associated with negative effects for most healthy adults. It is careful to note that sensitivity varies widely between people and that some conditions and medications increase it, and it recommends talking to a health care provider if you are pregnant, trying to become pregnant, breastfeeding, or concerned about a condition or medication.

For the upper bound, the FDA estimates that toxic effects such as seizures can be observed with rapid consumption of around 1,200 mg — a figure attached to concentrated caffeine products rather than to brewed coffee, which is a useful piece of context for how far apart normal drinking and genuine risk are.

Cutting down without giving it up

Use less coffee, not weaker-tasting coffee. Reducing the dose reduces the caffeine directly. Switching to a darker roast does not.

Make the later cups decaf.The FDA puts decaf at 2 to 15 mg per 8 fluid ounce cup and the NCA says decaffeination removes roughly 97 percent of the caffeine. Know that a cafe cannot tell you. The FDA notes that restaurants and retail food establishments are not required to disclose caffeine content, and encourages you to ask. At home you can simply weigh what you use, which is the cheapest form of control available.

Not zero. The FDA states that decaf coffee typically has 2 to 15 milligrams in an 8 fluid ounce cup, and the National Coffee Association says decaffeination removes roughly 97% of the caffeine. That is low enough for most purposes and not low enough for someone with a genuine sensitivity to ignore.

Does cold brew have more caffeine?

It can, and it depends entirely on how it was made. Cold brew is usually produced as a concentrate and then diluted, so the caffeine in the glass is set by the strength of the batch and how much water or milk goes in — not by the method itself. A concentrate drunk undiluted is a strong drink.
