How to Descale a Coffee Maker

Scale is the most common reason a gifted coffee machine slowly stops working. Here's why it forms, how often the National Coffee Association says to deal with it, and the honest answer on vinegar.

Of all the reasons a coffee machine ends up unused in a cupboard, this is the commonest and the most preventable. Nothing dramatic happens: the machine gets a little slower, the coffee gets a little weaker, somebody buys stronger beans to compensate, and eighteen months later the machine is written off as bad.

It usually is not bad. It is full of limescale, and twenty minutes of unglamorous maintenance would fix it. If you have given somebody a coffee machine as a gift, this is the page worth sending them a few months later.

Why scale forms at all

The US Geological Survey explains the chemistry plainly: water hardness is “caused by compounds of calcium and magnesium, and by a variety of other metals”, and when hard water is heated, “solid deposits of calcium carbonate can form”. Those deposits are what we call scale, and the USGS notes they can reduce the life of equipment, raise heating costs and clog pipes.

A coffee maker is close to a worst case: it heats fresh tap water to near boiling every single day and holds it in narrow passages. Whatever is dissolved in your water accumulates in the machine.

How fast depends on where you live. The USGS classifies hardness as follows.

If your kettle furs up visibly within a few weeks, you are at the hard end and your coffee maker needs attention more often than the average advice suggests.

How often

The National Coffee Association’s drip coffee guidance recommends descaling at least every three to six months to remove mineral buildup from tap water, alongside rinsing the brewing basket and filter with hot water daily and washing them periodically with hot soapy water.

Take “at least” seriously in a hard-water area — every three months is the sensible default there, and every six is fine on soft water or if the machine is filled with filtered water. If your machine has a descale indicator, it is measuring litres passed rather than actual scale, but it is a reasonable prompt.

The method

Read the manual first. That is not a disclaimer, it is the single most important step: manufacturers differ on what solution is safe in their machines, and getting it wrong can damage seals or void a warranty. If your machine came with or recommends a specific descaler, use it.

Absent a manufacturer instruction, the general shape of the job is the same on every machine:

  1. Empty the machine and remove the filter, basket and any pods or grounds.
  2. Fill the reservoir with the descaling solution, made up as its instructions say.
  3. Run it through as if brewing, with no coffee in the basket. Some machines want you to pause partway so the solution sits in the heating element.
  4. Discard what comes out, then run two or three full cycles of plain water to rinse. This step is the one people cut short, and it is why the next pot sometimes tastes of vinegar.
  5. Wash the basket, carafe and lid with hot soapy water and dry them.

On an espresso machine there is usually a separate step for the steam wand and group head, and those machines are far more likely to require the manufacturer’s own descaler. Check before you improvise.

The vinegar question, answered honestly

White vinegar dissolves calcium carbonate, it is cheap, and it is in every kitchen, which is why it is the internet’s default answer. For a basic drip machine it generally works.

The caveats are real though. Plenty of manufacturers explicitly tell you not to use vinegar in their machines, because acetic acid can attack rubber seals and certain metals over time, and using it can void a warranty. Espresso machines are the most common exclusion. Vinegar also needs more rinsing than a purpose-made descaler — it lingers, and a machine that has not been rinsed enough produces two or three genuinely unpleasant pots afterwards.

Our position: if the manual permits vinegar, it is fine for a basic drip machine. If the manual specifies a descaler, buy the descaler. The cost difference is a few dollars a year, and it is not worth risking a machine you were given as a present.

Prevention beats descaling

Scale is a function of what is in the water, so filtering the water is the lever with the most leverage. A jug filter, a plumbed filter, or the machine’s own water filter if it takes one will all slow the rate at which deposits build. Some people use bottled or distilled water; be aware that water with almost nothing in it is not ideal for coffee flavour either, so filtered tap water is usually the better compromise.

Two habits also help. Empty the reservoir rather than leaving water standing in it for days, and leave the lid open after use so the inside dries. Neither prevents scale, but both reduce the stale, slightly musty character that a permanently damp machine develops.

What descaling will and won't fix

It will fix a machine that has become slow, that no longer gets properly hot, or whose coffee has quietly become weak and sour over months. Brewing below temperature is exactly what produces that flavour, and scale on a heating element is the usual cause in an older machine.

Scale insulates the heating element and narrows the water paths, so the machine takes longer to heat, brews at a lower temperature and pushes water through more slowly. The result is coffee that tastes weak and sour, then a machine that runs slowly, then one that stops. The USGS notes that scale from heated hard water can reduce the life of equipment.

Does descaling make coffee taste better?

It makes it taste right again. Scale drops brew temperature, and under-temperature water extracts poorly — which produces a weak, sour cup no amount of extra coffee fixes. If a machine that used to make good coffee has quietly got worse over a year, descaling is the first thing to try, before new beans or a new grinder.

Do you need to descale a French press or a pour-over?

No — neither heats water, so neither accumulates scale. Your kettle does, though, and an electric kettle with visible white deposits inside is worth descaling for the same reasons. Manual brewers need cleaning rather than descaling: the NCA recommends washing a French press including its disassembled filter after every use.
